Once you have eaten this delicious coconut lime cake, you will never be able to live without it!
Dificulty: simple, preparation incl. cooling time: 4 -6 hours
INGREDIENTS
Cake base
- 2 eggs
- 10 g Erythrit-Stevia powder (you can add more to taste)
- 20 g cacao powder
- 7 g baking powder
- 40 g almond flour
- 40 g flaked coconut
- 60 g soft butter
Cream
- 3 sheets leaf gelatine
- 400 ml heavy whipping cream, cold
- 500 g cream cheese
- 80 g Erythrit-Stevia powder (you can add more to taste)
- 150 ml lime juice (fresh from 3 organic limes, for decoration grate and pick up lime peel)
- 2 handfuls flaked coconut for decoration on top of your cake
INSTRUCTIONS
- First lightly mix the 2 eggs with the Erythrit-Stevia powder with electric mixer on high speed. Add the soft butter and mix it.
Then carefully add the cacao powder and the baking powder. - Finally, add the almond flour and the flaked coconut. Now mix well with the mixer.
- Pour the into baking pan .
- Bake for 15 minutes with 160 °C (320 °F).
- Cool in baking pan for 10 – 20 minutes.
- Soak the gelatine leaves in a bowl of cold water for 10 minutes, until soft and floppy. Lift the gelatin from the water and squeeze out the excess liquid.
- For the cream filling, put cold whipping cream and 80 g erythrit-stevia powder in bowl and beat cream until stiff peaks form. In an other medium bowl beat cream cheese until smooth. Beat in lime juice until combined. Gently fold whipped cream into cream cheese mixture until combined.
- Add the gelatine in a pan and stir until it has completely dissolved. Now add 1-3 tablespoons of the cream to the heated gelatine and mix it.
- Add the gelatine-cream in the cream and whisk together until creamy and smooth.
- Spread filling in your baking pan.
- For decoration you roast 2 handfuls of coconut flakes in a pan until they take on some colour.
- Decorate the top of the cake with the coconut flakes around the edge and in the middle of the cake the lime flakes.
- Chill 4 – 6 hours before serving.
- Finish it and cut it into pieces. We divide it into 8 pieces.
